First off, the inspector writes he found numerous flies buzzing around throughout the kitchen. A roach was found on the floor where dishes are cleaned and a dead bug was found in the bottom of a clean pot in the area where dishes are washed. Neither insects are welcome at restaurants.

Two containers of spoiled strawberries were found in the walk-in cooler. They were thrown away. Food was found stored on the floor in the walk-in cooler, but shelves were present and that’s where the food should have been stored.
The dishwasher temperature was also off. It read 135 degrees but 160 is the proper hot temperature and no sanitizer was running through the cycle.

The inspector returned to The Burgers in Lenoir City. He checked to see if the original critical violations were corrected and they were. The new grade is 93.
