Bluestem Hollow opens beef
processing facility, store in Greenback Scott Keller
thedailytimes.com-Bluestem Hollow farm in Greenback celebrated its new livestock harvesting facility with a ribbon-cutting ceremony Friday, March 1, at its Meetinghouse Market. "By focusing on humane harvest and artisan butchery, we're not just opening a facility, we’re creating a new marketing channel for local cattle farmers," founder Christopher Burger said in a news release. "Our goal is to empower farmers and enrich our local economy by providing East Tennesseans with the finest quality local beef."
The release says that
less than 15% of beef in Tennessee is processed locally.
Bluestem Hollow plans to offer services to local producers,
expanding local beef options for consumers.
